Rant: the bakery on 5th in Eugene proofs by feel and the owner let me touch the dough
Stopped in for a morning bun at 7am and the owner was poking the dough, said "it tells you when it's ready" and handed me a piece to feel, and after 2 years of fighting with my instant thermometer it was the first time proofing actually clicked for me, so has anyone else had a baker just let them feel the dough instead of giving a number?
So the owner just handed you raw dough and that was a life changing moment? People have been baking bread for thousands of years without thermometers so it's not some big secret. It's cool that it clicked for you but a number is still a number and most of us need it.
