Rant: I baked 52 loaves of bread in one year and only 9 of them were actually good
I decided to bake one loaf every week for a year starting last January, mostly to stop buying the $4 sandwich bread at the store. By the end I had filled a whole notebook with notes and tallied up the results, and only 9 out of 52 loaves were what I would call a win. The weird part is that loaf number 41, a plain white bread I almost skipped, turned out better than the fancy sourdough I babied for three days. I think I learned more from the 43 fails than from the good ones, because now I can actually tell when my dough is underproofed just by poking it. Anyone else keep a baking log like this, or am I the only one writing down loaf numbers in a spiral notebook?
