My sourdough starter turned 100 days old yesterday and I'm kinda shocked
I started it back in March after my first few loaves were total bricks. I almost gave up after week two because it smelled weird and didn't rise. Kept at it, feeding it every single day with 50 grams of flour and water. Hit a real low point around day 30 when I forgot it on the counter during a heat wave and it separated. But I stirred it back together and it came back stronger. Now it doubles in size like clockwork and my bread actually has those big holes you see in pictures. It's wild to think this bubbly jar of goo is over three months old. Anyone else have a starter that just kept going way longer than you thought it would?

Oh man, the part about it separating during a heat wave is so real. Mine looked like a science experiment gone wrong last summer, all watery on top. I also almost tossed it a bunch of times early on. Mine's pushing two years now and it feels like a weird pet, this jar I have to feed. It's crazy how they just get more reliable with age.

Yeah, that watery layer is scary but it's just hooch. I poured it off, gave it a good stir with a fresh feeding, and put it in the fridge for a couple days to chill out. Came back totally fine.
