Last Tuesday every single loaf came out perfect, still shocked about it
I've been baking for about 8 years now and I still expect at least one flop per bake day. But last Tuesday I had six loaves of sourdough going, plus two batches of cinnamon rolls for my neighbor's kid's school thing. Every single one rose right, scored beautifully, and the crumb was exactly what I chase after. The kitchen smelled like a bakery you'd pay for, and I honestly kept checking the oven to see if something was off. It was just one of those days where the humidity, the starter activity, and my timing all lined up. The next day I tried the same recipe and two loaves came out flat as pancakes. Has anyone else had a perfect day like that and then felt like you lost the magic touch overnight?
The perfect bake day is just luck catching up with all your practice. Weird as it sounds, I trust the messy days way more, they teach you the actual boundaries of your dough. A flawless batch makes me suspicious lol, like okay what did I miss this time. Those flat loaves the next day are just the universe reminding you that baking is a conversation, not a math problem.
