Instant yeast used to scare me, now I'm a convert

I always thought active dry was the only legit way until I tried a recipe from my aunt that called for instant. My focaccia rose in 40 minutes flat and had way better bubbles, totally changed my mind. Anyone else switch teams and never look back?

Guess I'm the last person on earth to learn that instant yeast is basically cheating your way to perfect bread. Switched last month and my dough hasn't been this lazy since I started ignoring stretch and fold. My starter is probably crying in the back of the fridge.

Right? Instant yeast changed my whole baking game too.

Swapped to instant yeast about three years ago after my neighbor brought over some cinnamon rolls that were ridiculously light. Been using it for everything from sandwich bread to pizza dough and haven't missed active dry one bit. The proof times are way more predictable now and I don't have to babysit a bowl of water first.
