DAE think scoring your sourdough is overrated? My neighbor in Boise told me to skip it and she was right
Last month my neighbor Ruth watched me slice a sad loaf on my porch in Boise. I had a brand new lame and had cut a fancy leaf pattern into the top, and she said "why are you drawing on bread, just bake it." I was a little annoyed. Her point was that my cuts were too deep and the loaf fell flat in the middle. I tried her way on the next two loaves, one slash down the middle about half an inch, and both came out with a better rise than anything I had done in 6 months of trying to make it pretty. So now I am on her side and I think the scoring thing is mostly for photos. Anyone else get a better crumb from a boring single cut, or am I just doing the fancy cuts wrong?
Wait, your neighbor just stood on your porch and told you to stop drawing on bread? That's bold, but honestly the single cut thing makes sense since deep scoring lets all the air out.
