Chose between a springform pan and a tube pan for my first angel food cake
Last Saturday I wanted to bake an angel food cake for my mom's birthday, and I stood in the kitchen for 10 minutes holding two pans. The recipe said tube pan with feet, but I only had a springform and a cheap tube pan from a garage sale. I picked the tube pan even though it looked scratched up, and I flipped it upside down on a bottle like the internet said. The cake came out tall and fluffy, and only a tiny bit stuck to the bottom. Has anyone else had luck with a beat up old pan over a shiny new one?
Man, I have to disagree with you on the springform part. A springform pan is the one pan you should never use for angel food cake, even a nice new one. The whole point of that cake is that it climbs the sides of the pan while it bakes, and a springform has a loose bottom and a gap that lets the batter grab onto nothing. You got lucky with the tube pan because that is exactly what the recipe wanted, scratched up or not. The scratches do not matter at all, the structure of the pan does. A beat up tube pan with feet will beat a shiny springform every single time.
