Tried stacking a snack plate like that fancy tapas spot in Portland

Went to this small place called Una last week and their snack plate had like 8 different homemade pickles and a smoked almond butter that blew my mind. I tried to copy it at home but my pickles came out way too sour and the texture was off. Anyone got a go-to pickle brine recipe that doesn't require a ton of fancy ingredients?

Oh man Una sounds amazing, I love places that go all out on pickles! Have you tried just doing a quick pickle with equal parts vinegar and water plus a big spoonful of sugar and salt, then letting it sit for only an hour or two? That's my hack when I want that bright tangy crunch without waiting days for the brine to mellow out.
