My cheese board used to be just cheddar and crackers but now I add fruit and pickles after a trip to a farmer's market in Portland last fall
I used to just pile everything on one big board without thinking about texture or acidity until I saw a vendor there balance salty cheese with sweet fig jam and it made total sense for my night shift snack cravings, anyone else have a moment where a single ingredient changed how you build your whole plate?

Started grabbing cornichons and those little pickled onions to throw on the board after that same Portland trip, they cut through the fat of a sharp cheddar way better than grapes ever did for me. Now I always keep a jar of spicy pickled okra handy for when I want that vinegary kick with a soft brie or camembert, it wakes up the whole thing. The key is finding pickles that aren't too sweet or too sour, just a middle ground that brightens every bite without overpowering the cheese.
