Tried the "no flip" hack for crispy fries, ended up with a smoke detector solo
Honestly, my neighbor Dave swore up and down that if you soak frozen fries in water for 20 minutes and then toss them in cornstarch, you can skip flipping them halfway and they still come out perfect. I did exactly that at 400 degrees for 15 minutes. At minute 12, my kitchen filled with smoke so thick I couldn't see the counter. Turns out the cornstarch bonded with the oil and turned into a weird crust that burned on the basket grate. My smoke detector went off three times and my cat hid under the bed for an hour. The fries were actually crispy on top but the bottom was black tar. Has anyone else had a hack like this backfire in a spectacular way? What's your go-to for actually getting even crispiness without babysitting it?
