Last Tuesday I finally figured out the perfect way to do chicken wings
I've been using my air fryer for about 3 years now and always got okay wings. But last Tuesday I was bored and tried something different. I patted them dry with paper towels, put them in the fridge uncovered for 2 hours, then seasoned them and cooked at 380 for 25 minutes, flipping halfway. The skin was actually crispy like you get from a restaurant. Has anyone else tried drying them out first like that?

That drying in the fridge trick is the real deal. I've been doing it for years and it makes a huge difference on the skin.

Wait, am I the only one who's confused about the fridge trick here? Do you mean storing the dried thing in the fridge, or actually drying it in there? Cause putting something wet in the fridge to dry just sounds like a mold farm waiting to happen. Fridges are humid places, not dry ones. I tried that once with some wet leather boots and they just got all musty and weird. Maybe I'm doing it wrong but I always thought you needed airflow and low humidity to dry stuff properly.
