Oh man, I've been there. The trick is pressing them for a solid 15 minutes with paper towels before you even touch the pan. Then toss them in a little cornstarch before frying and they get that perfect crunch every time.

Fifteen minutes? By the time I finish pressing water out of my eggplants, the kitchen's flooded and I've given up on dinner. Did you learn that trick from a cooking show or just trial and error?
