Air fryers are the only way to get my brother to eat anything green.

He'll devour air-fried Brussels sprouts but turns his nose up at steamed ones.

The dry heat and a bit of oil make vegetables like broccoli or Brussels sprouts crispy and sweet. You can get the same result on a sheet pan in a regular oven. Totally agree with this, and it's something I see all the time with tech and gadgets. People get hooked on the newest thing, like air fryers, but forget that the basic idea (roasting with hot air) is what does the work. It's like how everyone bought fancy cameras but still took blurry photos because they didn't learn about light or composition. The tool can help, for sure, but without knowing the method, it's just a shiny box. Same with kitchen gadgets, where a good knife and some practice often beat a dozen single-use appliances. So yeah, the roasting method is key, not the machine itself.

Oh man, @michael_mason, you are so right and it's a little embarrassing how long it took me to figure that out! I totally got caught up in the gadget hype and bought a fancy air fryer, only to realize my oven's convection setting does the exact same thing.
