Read something similar on a retro gaming forum about how old VHS rips have this weird charm digital remasters just don't capture...

Funny you mention that, I spent way too long trying to get my old VHS tapes of Star Wars to look right on a modern TV. Best luck I had was using a cheap capture card and running it through something like VirtualDub with a simple deinterlace filter. It kept that soft, slightly blown out look but cleaned up the worst of the tracking noise. Just make sure you're capturing in full resolution before you resize it, otherwise it comes out too blurry.
